The Region of Poitou-Charentes is made up of four departments: Vienne, Deux Sèvres, Charente and Charente-Maritime. With a wonderful coastline and a heritage which includes over a thousand churches, hundreds of châteaux, fortresses and prehistoric sites, this area is an eclectic mix not to be missed!

Charentais Rabbit Casserole - Tender young rabbit, marinated in white wine and flambèed with Cognac. Delicious!
Saintongeaise Beef Stew - Boiled beef and carrots with a very distinctive gallic twist - utilising the fine wine of Bordeaux and (of course) a little Cognac. Hmmmmm...
